Ackee, Saltfish and Callaloo tried and tested recipe

Ingredients:

For the fish –

1 lb salted cod
1 lb canned ackee, drained
2 tablespoons oil
1 onion, chopped
2 peppers, chopped
1 scotch bonnet chili, chopped

For the callaloo –

3.5oz butter
14 oz callaloo or spinach leaves
1 teaspoon nutmeg
3 tomatoes, chopped

Soak the cod in hot water overnight. Change the water frequently.

Saute the vegetables then add the cod and ackee. Cook for 6 minutes.

In a separate pan, melt the butter and saute the callaloo until it wilts. Add the nutmeg.

To serve, place the ackee and saltfish into the middle of a dish and drape the callalloo around the outside to distribute seasoning. Drizzle with hot sauce if desired.

How to cook Ackee and Saltfish Fritters step by step instructions

Ingredients:

2 cups salted cod, soaked overnight
2 cloves garlic
1/2 medium onion
1 teaspoon thyme
1 tablespoon cilantro
1 scallion
1 cup flour
1 teaspoon baking powder
1/2 cup ackee
Canola oil

Put seasonings and vegetables into a food processor until finely chopped. Pour this mixture into a separate bowl.

Drain and flake the saltfish, then shred it with the food processor. Pour the ackee and the shredded saltfish into the first mixture. Stir.

Add flour and baking powder. Stir. Add water and stir until this forms a batter.

Pour 3 inches of canola oil into a sauce pan. Using a spoon, drop spoonfuls of batter into the oil and fry.

Ingredients:

1 can ackee
4 nori sheets, torn into small pieces
1/2 bunch of kale or spinach, chiffonade
1 small onion, sliced
1 sweet pepper, julienned
3 scallions, chopped
3 large garlic cloves, minced
1 inch piece of ginger, peeled and grated
1/2 scotch bonnet pepper, deseeded
Salt to taste

Saute the onions, ginger and peppers for 4 minutes. Add kale and sauté for 2 minutes. Drain and stir in the ackee. Finally, add the nori sheets, scallions and garlic. Saute for 5-10 minutes or until the entire dish is warm.
